Summer is here and we want to share some of our favorite recipes for your summer gatherings and picnics.  Here is one of EJ's favorite dishes to make for the season:


  • 3 Roma tomatoes, seeds removed, sliced
  • 2 ripe avocados, diced
  • 1/3 C red onion, diced
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can black eyed peas, rinsed and drained
  • 1 ½ C frozen sweet corn, thawed
  • 1 bell pepper, diced (red or green or both)
  • 1 jalapeno pepper, seeds removed, diced into very small pieces
  • 1/3 C cilantro, finely chopped


Combine all ingredients in a large bowl. Toss/stir well, so that ingredients are well combined.



  • 1/3 C olive oil
  • 2 Tbl lime juice
  • 2 Tbl red wine vinegar
  • 1 tsp sugar
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ tsp garlic powder


In a separate bowl, whisk together the dressing ingredients. 

Pour dressing over other ingredients and stir/toss very well. 

Keep refrigerated. If not serving immediately, be sure to toss/stir well before serving.
